Velvety, filmy and perfectly balanced. It is a sultry dance in which many different flavors follow each other. The warm Sherry Oloroso tones with currants and raisins in combination with vanilla come to the fore first. Followed by a hint of blue agave. Then forest fruits, especially raspberry, roasted coffee beans and cocoa. A little black pepper finishes it off. In the aftertaste you will find Spanish oak, vanilla and roasted almonds supplemented with cocoa. A fantastic interplay between warm sweet tones, fresh summer fruit, wood and nuts.

Sherry oloroso barrels are barrels originally used to age sherry wine. Oloroso is a type of sherry that is darker, richer and more intense in flavor. These casks are often used in the gin (and whiskey) industry to age gin, enriching the gin with the characteristic sherry notes, such as dried fruit, nuts and spices.
We allow malt wine, grain alcohol and even our classic JDG to mature in oak sherry casks or port casks. The tones of the barrel, and what was once in it, soak into the alcohol. This is how special flavors are created.

We let a mixture of alcohol, water (or extract) and herbs boil. The fine aroma substances evaporate from the herbs and we condense them. This is how we capture flavors, but mainly smells. The color of the mixture remains in the kettle. Bee Hooghoudt we use for this.
